These are the beans premium extract, paste and pastry programs build their labels on. Grade A gourmet: plump, oily whole pods at 32% moisture, 2.5% vanillin, and a signature profile — bold and earthy with chocolate undertones that read as depth, not just sweetness, in the finished product. Pods run 5–6 inches (13–15 cm), flexible enough to wrap around a finger, dense enough to give up a heavy load of caviar under a knife.

Every bean was sourced, cured, graded and QC’d by Evanille’s own operation. No brokers, no blended lots of unknown origin — full traceability from farm to our Florida warehouse. What makes a vanilla bean gourmet grade?

Moisture, an oily unblemished surface, and flexibility — a Grade A pod at 32% moisture bends around a finger without cracking. It is graded on appearance and moisture, not on flavor: vanillin is 2.5% in our Grade A and our extract grade alike. Full comparison: Grade A vs Grade B.

Are these organic vanilla beans?

They are grown and cured without additives, irradiation or artificial vanillin. Organic certification is available on request rather than carried by default — ask us before ordering for a certified label and we will confirm what documentation the current lot can support.

How should I store gourmet beans?

Keep them vacuum-sealed in a cool, dark place and reseal after opening. Properly stored Grade A beans hold quality for months — avoid refrigeration, which drives condensation and mold. Method: storing vanilla beans.
